Vegetarian Pho

Easy copycat Vietnamese Pho, using ingredients you already have at home.

1. In a large pot, heat 1 tbsp olive oil.
2. Once the oil is heated, add 3 cloves minced garlic, 1 tbsp grated ginger, ½ chopped onion, and 1 tbsp red chili flakes.
3. Once aromatic, add 6 cups vegetable broth, ¼ cup Hoisin sauce, and 2 tbsp lemongrass. Cover and cook for 20 minutes, stirring occasionally.
4. Add in 1 package of rice noodles. Cover and cook for 5 minutes, or until rice noodles are cooked through.
5. Pour into a bowl. Top with bok choy, cilantro, and a quartered lemon.
6. Enjoy!
