Spicy Chicken Tom Yum Curry

A delicious and easy at-home recipe for restaurant-style Thai chicken curry, full of flavor and spice.

The Marinade:
1. In a medium-sized bowl, add the following ingredients:
-3 tbsp Tom Yum paste
-2 tbsp red curry paste
-1 tbsp caramel sauce
-1 clove minced garlic
-1 tsp ground ginger
-salt and pepper to taste
2. Whisk well, until completely smooth.
3. Marinate chicken cubes for 4 hours.
The Sauce:
1. In a medium-sized bowl, add the following ingredients:

-2 tsp lemongrass
-salt and pepper to taste

To make the Spicy Chicken Tom Yum Curry:
1. In a wide pan, heat 1 tbsp oil. Add in 3 cloves of minced garlic and 1 tbsp grated ginger.
2. Add in 2 chopped carrots and marinated chicken cubes, and stir.
3. Add in the sauce. Stir well, until all vegetables and chicken are coated completely.
4. Cover and cook for 5 minutes.
5. Add ¼ cup coconut milk and stir well.
6. Cover and cook for 25 minutes, until chicken is cooked through, stirring occasionally.
7. Serve with rice, and enjoy!
