Pasta with Vodka Sauce
A quick-to-make take on traditional Italian vodka sauce, easy to whip up for lunch.
1. Sauté 2 cloves of garlic and 2 tsp red chili flakes in olive oil. Once the garlic has browned, add in ½ chopped red onion and sauté until the onion is translucent.
2. Add in 2 cups tomato purée and stir. Sprinkle 2 tsp basil, 2 tsp oregano, 1 tsp thyme, 1 tsp rosemary, and 1 tsp salt.
3. Cover and cook for 5 minutes.
4. Add ½ cup vodka and ½ pasta water*.
5. Cover and cook until simmering.
6. Serve with pasta, topped with freshly shredded cheese. Enjoy!
Serves 4.
*Pasta water is starchy water from when the pasta is cooking. It is meant to thicken the sauce, but adding pasta water to your sauce is optional.
Optional: You can substitute Step #2 with readymade pasta sauce for a similar flavor.
