Meringues
An easy recipe to make classic meringues: light and delicious!
Meringues have a bad rep, built off a reputation of being hard to make. With this easy recipe, you'll realize just how simple it is to make tasty meringues! With four ingredients, blow away your friends and family.
That being said, meringues take patience. Don't rush the process. If you rush any of the steps, you can end up with flat or burnt meringues. Take your time, and your meringues can be in the oven in 30 minutes!
1. Separate the yolks from 2 eggs (best done while cold). Discard the yolks, and leave the egg whites on the counter for ~5 minutes to bring to room temperature. Preheat oven to 225°F.
2. In a large bowl, lightly whisk the 2 egg whites.
3. Add in ½ tsp white vinegar and a pinch of salt.
4. Using a stand mixer or an electric hand mixer, start on a low speed and whisk. Gradually increase the speed, until reaching full speed. Keep whisking until soft peaks.
5. Slowly add ¼ cup sugar, beating on high speed until stiff peaks. If you flip the bowl over and the meringue stays in place, you know you're done.
6. Add 1 tsp of your favorite extract, carefully folding the mixture with a soft spoon (optional).
7. Gently spoon the meringue mixture into a piping bag or Ziploc bag. Pipe the meringue mixture onto a prepared baking sheet. Keep about 1" between meringues.
8. Bake in the oven for 45 minutes. Do not open the door while baking. This will cause the meringues to collapse.
9. Once done baking and without opening the door, leave the meringues to cool in the oven for 30 minutes.
10. Take the meringues out of the oven and carefully place on a cooling rack.
11. Enjoy your meringues!
