Lemon Amaretto Cookies

Lemon Amaretto Cookies, topped with sliced almonds

Lemon and amaretto make a dashing flavor combination, which makes these cookies just so scrumptious. Enjoy with tea, with your breakfast, or as a snack!

1. Preheat oven to 350°F.
2. In a large mixing bowl, mix together: 1 egg, 1 tbsp melted butter, 1 tbsp lemon extract, 1 tbsp amaretto.
3. Stir in: 1.5 cup almond flour, 1/4 cup sugar, and ½ tsp baking soda.
4. Scoop dollops into a prepared baking pan.
5. Top with sliced almonds (optional).
6. Bake at 350°F for 15-17 minutes, until golden brown.
7. Remove from oven, cool on a cooling rack, and serve!

Makes 10 cookies.
