Almond Cookies (GF)

Semisweet gluten-free almond cookies, perfect for a snack, with tea or coffee, or for breakfast.
1. Preheat the oven to 350° and lightly grease a baking pan.
2. Mix the wet ingredients: 1 egg, 1 tsp vanilla extract, 1 tsp almond extract, and 1 tbsp melted butter.
3. Fold the dry ingredients in: 1 cup almond flour, ½ tsp baking soda, ¼ cup sugar.
4. Mix well, then lightly fold in ¼ cup sliced almonds.
5. Scoop dollops of cookies into a prepared baking pan, leaving 2 inches between the cookies.
6. Bake at 350° for 10-13 minutes.
Makes 8 cookies.
